Well, it's made out of refined sugar beet sugar that's compacted under very high pressure. This makes for a very hard grain, that won't melt during the baking process. The nice, white pearls will give your waffles or cookies an extra crunch, and a nice decorative touch. Thomas, the owner of Wafels & Dinges, even worked for a while in this factory in 1995.
